I am just learning to temper chocolate. This was my first attempt. I started with a chocolate bar because I thought it would be easier and chose this mold because reviews of other polycarbonate molds said they were too thin. Well my tempering turned out perfectly but these molds are so thick, they would probably work better if you want to put a filling in your chocolate bar. Just the nuts on top ended up being a lot of chocolate to nut ratio. Anyhow, the chocolate came out great. Becasue it’s so thick, when it comes directly out of the fridge you can’t easily break the chocolate. But if it sits out on the counter for a little while you can break it just fine. I definitely recommend the mold. I will try with a filling next time.
