About this item
- HIGHEST QUALITY JAPANESE CERAMIC: Our ceramic hones are made with quality Japanese ceramic materials built to withstand years of use and ideal for hard steel knives including Japanese knives.
- CHOOSE FROM 2 GRIT OPTIONS: This knife hone offers 2 different grit options in 1 honer! Choose to sharpen your knife using 2 more aggressive sides of lined/stropped 2000 grit for particularly dull knives, polish the edge up using 2 sides of finer smooth 3000 grit, or use both for progressive knife sharpening.
- SAFER DESIGN AND MATERIALS: No plastic or rubber tips at the end of the ceramic sharpener keeps your knife from being damaged or chipped by accident while honing. Our Japanese ceramic is odorless, non-toxic, never rusts, and is designed not to breed bacteria. A ceramic sharpener you can trust!
- HANGING LOOP FOR EASY ACCESS– We include a stainless steel metal hanging ring so you can access your knife rod quickly and easily in commercial kitchens!
- MAINTENANCE: Our ceramic rods are very hard, and like all ceramics, are sensitive to shocks. Please avoid dropping the knife sharpener tool or hitting it on a hard surface, as it is liable to break. If you have butter fingers, we recommend checking out our steel honing rods!

Product Description
Keeping Our Knives Sharp 101
As counterintuitive as it may sound, a sharper knife is a safer knife! Dull knife blades tempt us towards bad habits while cutting, putting our fingers where we don’t want them to be! Thus it is imperative we keep our blades sharp.
So how do we go about doing that?
Honing Rods vs. Knife Sharpeners
Honing a knife absolutely makes a blade’s edge “sharper,” so it makes sense that many of us think a honing rod is actually a sharpening rod. There’s a difference though. What we see chefs doing all the time on our favorite cooking show is actually honing a knife rather than sharpening it. Sharpening a knife is usually done with a whetstone and removes a noticeable amount of metal from the blade. For home cooks, this shouldn’t be done more than 2 times a year. What we should be doing on a regular basis, is honing our knives!
A knife hone does remove a small amount of metal, but it is minimal. Rather, a hone realigns the blade’s edge, which has experienced microscopic folds during use, removing the dullness created over time. Readjusting the knife edge will make it cut like new without taking away so much of the knife itself, helping the blade last longer than it would from repeated sharpening!
What About Ceramic Hones?
Ceramic rods fall somewhere between honing and sharpening depending on their grit. A ceramic grit around 400-800 is sharpening your knife. A grit around 2000 is honing your knife.
The main difference between all honing rods is how hard each is, and how much metal they remove from your knife. Briefly, coarseness and metal removed in decreasing order is diamond, ceramic, steel.
Ceramic rods should always be used over steel rods for harder knives like Japanese knives.
What Sets Noble Home & Chef’s Honing Rod Apart?
- 4-sided with 2 grit options: Stropped 2000 grit or a fine 3000 grit
- Oval handle allows for a sturdy, firm grip for added safety
- The Ceramic possesses ultra-high hardness (Mohs 8, Rockwell over 100), high accuracy of straightness, and low thermal conductivity
- includes a stainless steel ring used to conveniently hang the rod for storage
- Ceramic rods are lighter than sharpening steels therefore reducing fatigue when repeated use is necessary
- Easily cleaned with soapy water, rinsed, and allowed to dry. Not intended for dishwasher use.
- The ceramic raw materials are imported from Japan and the rods are produced by special sintering technology
- The tip of the rod does not have any plastic or rubber for your knife to get caught on, it is 100% ceramic
- Japanese ceramic is odorless, non-toxic, never rusts, and is designed not to breed bacteria!
- All ceramic rods are sensitive to shocks. If the ceramic sharpener is dropped, it can be damaged.
2 Grit Options!
Choose to sharpen your knife using 2 sides of stropped 2000 grit for particularly dull knives, polish the edge up using 2 sides of fine 3000 grit, or use both for progressive knife sharpening.
Slice Through Meats and Vegetables Easily!
Our progressive 1000 and 2000 grit sides leave your knives slicing through meats, vegetables, and fruits effortlessly. Stop working through dull blades and reduce prep time with our ceramic honing rods!

Treat Her Nicely! All ceramic knife rods are sensitive to shocks. If the ceramic hone is dropped or hit against the edge of a surface, it can be damaged. The hone will take amazing care of your knives! Treat her well in return! |
Simple Washing! While it is not necessary to wash hones after each use, it is recommended you wipe the stropping ceramic down with a wet cloth to remove the metal particles. For deeper cleaning, just use soapy water, rinse, and dry! |

A ceramic sharpening rod is different from a steel honing rod. A steel honing rod just re-aligns the cert edge of your blade so that the edge no longer has slight deviations in it, the steel rod another the edge so that instead of looking like this with microscopic misalignments --_----__-- your edge is straight and aligned like this ---------- so it cuts better.
A ceramic sharpening rod not only aligns the edge but also removes a little bit of steel to sharpen AND align the knife edge.
What many people will like about this BLACK CERAMIC rod is that it does not show any grey streaks like the white ceramics do.
I love the ceramic so far. There are grooves on each "side" of the cylindrical rod. I have personally found that these types of grooves leave microscopic serrations on the edge, which greatly improved slicing cuts.
There are two types of cutting to consider when choosing your edge:. A pretty smooth edge like a razor is good for push-cutting, like chopping vegetables straight through. A slightly serrated edge is best to "bite" into the material as you slice with the edge instead of just push.
I prefer to hone my edge with the smooth part of the rod to align the edge of my knife until it shaves hair with a push-cut, then finish up with with a few strops on the ridged grooves of the rod to put some micro-serrations on the edge.
The handle is very comfortable and ergonomic. The plastic has a tiny bit of seams on it from the injection mold, which is the only thing about this tool that looks a little cheap. But it feels and works great!
The rod is very long. And again, being all black, looks elegant. I think this would be a great gift!
For the price, this looks far more expensive than it is. It's a great bargain!
Made in Japan and Taiwan.
These are my first impressions. I will write more if I encounter any issues.

Ideally, very fine sharp knife edges need to be maintained with honing before each use or when you notice a loss of sharpness. A hone doesn't really sharpen knives, they maintain sharpness by straightening the edge and/or by putting on (sharpening) a tiny micro bevel.
I would recommend the white hone if you need a hone that will be more aggressive in its ability to do minor sharpening. Get the black hone if you want to maintain your freshly sharpened knives at a very high level.
I recently started learning how to sharpening my own knives at a very high level. A have a Sharp PT50B tester to measure sharpness. Scores in the 50-100 range are extremely sharp (scary sharp), Scores 100-200 are a pleasure to use and scores in the 200-300 are typical of new high end knives.
My knives consistently measure in the 50-100 range after sharpening which are scary sharp. However, after several uses, especially with a cutting board, they will often measure in the 200-250 range. Still very sharp, but not a pleasure to use as compared to the initial sharpening. After using this hone (20-30 strokes per side) I'm back to getting sharpness scores in the 140-160 range. If the knife has been really worked over, then I will do 5 to 20 strokes with the "coarse/grooved" part of the hone to more aggressively recreate the micro bevel.
I'm very satisfied with this purchase. I now have a way to maintain/restore the sharpness on my knives between sharpening. Exactly what I was looking for.
Ps: get the 2k-3k option. 1k-2k is good but if you want it really sharp get the black one. And you don't need both. It will just take a little bit longer to sharpen using the 2k-3k since it doesn't take off as much material but the edge will be a lot sharper.
