Product Description
THE No.09 STAINLESS STEEL OYSTER KNIFE
Unique in its folding design, the No.09 Oyster Knife was designed to safely stow away, making it easy to carry - whether that’s on a boat, or in your pocket as you head to the beach. With a short, robust blade the unique design centers the knife’s axis to facilitate easy oyster opening. Thanks to the Virobloc locking ring, it will stay closed when you want it to, and open when you need it to!
THE RIGHT FEATURES AT THE RIGHT COST
While Opinel is known for its signature sharp blades, this knife features a blunted blade with a sharp tip, specific to oyster shucking. The padouk wood handle is resistant to swelling, and utilized for its ability to hold up well in humid or wet environments.
THE PERFECT SIZE FOR EVERYDAY CARRY
Both smart and simple, the Opinel folding knife is composed of 5 elements: the blade, the wooden handle, the fixed ferrule, the rivet and the rotating VIROBLOC locking ring which was added in 1955 to sizes No.06 and above.
The knife is equipped with a 2.5 inch blade, open length 7.2 inches.
CARING FOR YOUR KNIFE
All Opinel wooden-handle knives are not designed to be washed in the dishwasher. Heat and moisture will cause any wood to swell which will make the knife hard to open at times. Opinel suggests carefully hand-washing your knives and leaving them out to air dry.
The Sandvik 12C27 Mod. Stainless Steel used for the blades is low maintenance, meaning it is highly resistant to rust and can be polished or cared for with simple organic oils.
MADE IN THE FRENCH ALPS FOR OVER 130 YEARS
Joseph Opinel designed his first pocket knife in 1890, creating a tool that is as robust and functional as it is simple and beautiful. From his workshop at the foot of the French Alps, Opinel forged a cult classic. Generations of artists, explorers, and farmers have carried the instantly recognizable, imminently useful Opinel knife in their pockets.
Little has changed since 1890. Rooted in history and a commitment to craftsmanship, the Opinel family still makes their knives in the Savoie region of France. Each year, THEIR team of 150 employees in France manufactures over 5 million knives, ranging from outdoor tools to kitchen knives, all to honor Joseph Opinel’s focus on quality and simplicity.

Locking mechanism also inspires confidence as this is based on twisting the ring you see between the blade and the handle to lock the blade open. Same ring also serves to lock the blade shut. My knife came through with zero play in the blade, in fact it's a bit stiff to open as a result (a good thing). Fit/finish on my knife was flawless and the locking mechanism worked smoothly and precisely.
The blade and the hinge are also bound in a second ring which sits within the locking ring -- so with the blade extended there are actually two substantial steel rings holding it true and tight -- I'll be surprised if torquing the blade side-to-side as part of shucking poses any problems or loosens things up. All in all, this is a simple but brilliant mechanism, common to many of the Opinel knives, but particularly apropos due to the twisting motion used to open an oyster.
The one concern I have is whether there will eventually be any swelling or warping of the wood handle due to moisture in the slot for the blade or around the locking ring -- looks like everything is sealed so hopefully will be ok. And I would not let this get in the way of purchasing a great looking, well-designed oyster knife that is very functional.
With regard to this particular model, the wood handle...nicely finished and beautiful in color. The SS blade is reasonably thick and not ground to sharpness as it is not its purpose to cut, but to unhinge...to separate, as it were.
I bought 6 of each, large Cherry Stones and Blue Points to test. It worked effortlessly with the clams, opening them easily. With regard to the oysters, not so much. It became a prying tool which it should never be used for. The blade began to flex at its handle pivot point and I could see that would be pointless to continue. So, clams good, oysters bad...still love these knives.

Top !!!
Messer liegt super in der Hand. Sicherungs-Ring stabil !
Klinge solide. Austern haben geschmeckt. Zu empfehlen.
To those reviewers that complain it's not sharp, 'THAT'S HOW IT'S SUPPOSED TO BE.' The knife is not for cutting it's for opening shellfish, the blade doesn't need to be sharp.
