About the authors
Kate Kasbee is a cookbook author, recipe developer, and photographer. Her approach to cooking celebrates fresh fruits and vegetables, whole grains, and lots of pasta. Kate is also the content creator behind the food blog Well Vegan. Her first co-authored cookbook, Frugal Vegan, was published in 2017 and her second cookbook, Vegan Boards, will be released in 2021. When she’s not blogging and writing cookbooks, Kate partners with food brands to highlight their products in creative and mouthwatering recipes.
Kate’s passion for cooking took hold while attending Matthew Kenney Culinary in Thailand, where she became a certified plant-based chef. She completed her studies at the Institute for Integrative Nutrition, which further shaped her view on achieving wellness through balancing plenty of veggies with pizza and wine. A wanderer at heart, Kate’s recipes are inspired by her travels and the flavors of her favorite parts of the world.
Kate lives in Los Angeles with her fiancé, their dog, and a huge collection of spices.

- Reviewed in the United States on August 31, 2017A lot of these recipes have ingredients that I already have and I've only been eating vegan for the past month and a half. The very first recipe I tried was that easy vegan enchiladas. They were absolutely amazing. It was my first time using TVP. My parents came over to grab a container I had made for them, and they ended up eating the entire thing in my home. My meat eating loved them too. The best part was that it took me 10 minutes to make and 30 minutes in the oven. Recipes like the ones found in this book are great because they're easy and not time consuming. After coming from work and having three hours at most to cook dinner, feed and bathe my toddler and get him in the bed by 8 PM, I can say that this is the book I was looking for.

There is a ton of educational information in the back of the book as well for all the folks that are still learning about transitioning to a vegan-based diet. Oh, by the way, the burrito bowl is fabulous!

I have some experience in the kitchen, so I would not say all the recipes are “easy.” My thoughts are the recipes are more at an intermediate level of cooking skills. The book is filled with interesting combinations of food that seem tasty. But because I feel somewhat intimidated by the lengthier recipes, I have yet to cook any recipes in a year of having the book. I am new to being vegan, so I wanted a good book to rely on. This book has many interesting recipes. Enjoy

The recipes do not contain all kinds of crazy gourmet ingredients. You can get everything from the local grocery. The recipes are also easy to cook and unlike most cookbooks, I use almost all of the recipes. I'm not even vegan. Also, the foods are real food, not a bunch of processed, artificial stuff like you get in most vegan food. The only thing I would change in the book is too always use a stick mixer instead of a food processor or blender.
- Reviewed in the United States on January 7, 2019I've been on off vegan for near a decade. Work full time and dislike crazy/exotic/expensive ingredients and recipes that take days to make. This book is great for a vegan that wants to take it "easy" and still eat something good. If you're a vegan, we all know it's some work no matter what. There are options out there for vegans now that weren't there even a decade ago. And it's easy to substitute. Don't want soy tofu? Use soy free tofu.. or make it yourself. Don't have whatever type of oil, use a different one. The book does call for quite a few recipes that involve tofu. There are simple recipes and even some that take some time. It's great. I personally love butternut squash and was hoping for more of it, but that's ok. I use spaghetti squash for the carb party noodles and it works great. You can find the ingrediants in most grocery stores, not just big city ones. Not obsessively healthy vegan recipes. Comfort ones for sure. And that's my style and what I was looking for. Hence the five stars. ☺

My partner and I eat plant based for the majority of our diet, and this book gives us some really great easy, quick recipes. (She is a super picky eater, so the food has to look appealing, and not feel "too healthy", this author does a great job of providing just that.
I think something at really separates this books from the dozens of other vegan cookbooks I own, is that the shopping list the author gives you really is so forgiving, and allows you to shop accordingly without becoming broke or overwhelmed.
There are a variety of different substitutions offered, and the photos are simple, bright, beautiful, and encouraging.

It is definitely geared towards beginners, the good is the stroganoff, the pumpkin pasta, and the desserts are all good. There is sauce recipes and those are good too but otherwise it's a 2.5 star cookbook I spent a half hour making bbq chickpea sliders and it was terrible. In the end the vegan for everybody cookbook is the way to go over 200 recipes in depth and amazing technique for great food and shopping/cooking guide.

I am not a cook book person because even books that state "simple, quick, easy, things you already have in pantry"....none have proven to be true. This book however, is AWESOME. Simple recipes that my non-vegan family will actually eat. Nothing too sophisticated, either! After all, we are a pretty average family of 5 just trying to get real food on the table between soccer, cheerleading, horse riding lessons, and scouts. I am guilty of hitting drive throughs out of frustration and convenience. This book has some fantastic ideas that I can't wait to put in front of the kids. There are the occasional oddball ingredients but, the author makes it so easy to figure out what it is & even tells you where you would find it in the grocery store. 2 thumbs up.
